Whole Spices

Black Pepper 

Black Pepper largely used has the ability to correct the seasoning of dishes, therefore used as a final dash at the end of cooking to effectively adjust the flavour. It is an important component of culinary seasoning of universal use and is an essential ingredient of numerous commercial foodstuffs. It is also used as an ingredient in spice mixes. White pepper is used in products like mayonnaise where, black specks of black pepper is not liked. Black pepper is an essential ingredient in Indian system of medicine. Piperine, the pungent principle in pepper oleoresin helps to enhance bio-availability and therefore used in pharmaceuticals. The major functional properties of pepper are analgesic, anti-pyretic, anti-oxidant and anti-microbial. Export quality black pepper in India is known as MG-1 or Malabar Garbled - 1.
 
Turmeric 

Turmeric is native to India, it is cultivated in the States of Andhra Pradesh, Maharashtra, Orissa, Tamil Nadu, Karnataka and Kerala. Apart from India, it is cultivated in large parts of Asia and South East Asia, East & West Africa, South Pacific Islands, Malagasy, Caribbean Islands and Central America. Turmeric is the rhizome or underground stem of a ginger-like plant. It is usually available ground, as a bright yellow, fine powder. Turmeric is used to flavour and to colour foodstuffs. It is a principal ingredient in curry powder. Turmeric oleoresin is used in brine pickles and to some extend in mayonnaise and relish formulations, non-alcoholic beverages, gelatins, butter and cheese etc. The colour curcumin extracted from turmeric is used as a colourant.
 
Dry chilly 

Dry chilly is extensively used as spice in curried dishes. It is also used as an ingredient in curry powder and in seasonings. Bird chilly is used in making hot sauces as pepper sauce and Tabsco sauce. Paprika, Bydagi chilly, Warangal chapatta and similar high colour less pungent varieties are widely used for colour extraction. This colour is highly popular among food and beverage processors for its use as a colourant, since this being a ‘natural plant colour’. As a medicine it is used as an counter irritant in Lumbago, Neuralgia, and Rheumatic disorders. The enzyme isolated from chilly is used in the treatment of certain type of cancers. Oleoresin capsicum is used in pain balms and vaporubs. Dehydrated green chilly is a good source of vitamin ‘c’.
 
Cardamom 

Cardamom is one of the world's very ancient spices. Cardamom comes from the seeds of a ginger-like plant. The pods can be used whole or split when cooked in Indian substantial meals - such as pulses. A stimulant and carminative, cardamom is not used in Western medicine for it own properties, but forms a flavouring and basis for medicinal preparations for indigestion and flatulence using other substances, entering into a synergetic relationship with them.
 
Green Pepper Products 

Dehydrated Green Pepper is used for grinding/cracking, in soup mixes and pepper mills and in meat, sausage & egg preparations.
Green Pepper in Brine is used for making sauces and purees and in the food service sector. The catering sector specially utilizes this product in the green pepper steaks. It is also a popular pickle by itself or mixed with other spices/vegetables.
 
Dry Ginger 

Dry Ginger is the dried underground stem of the herbaceous tropical plant grown as an annual. The whole plant is refreshingly aromatic and the underground rhizome, raw or processed, is valued as spice. Ginger is a slender perennial herb, 30-50 cm tall with palmately branched rhizome bearing leafy shoots. It is indispensable in the manufacture of ginger bread, confectionary, ginger ale, curry powders, certain curried meats, table sauces, in pickling and in the manufacture of certain cordials, ginger cocktail, carbonate drinks, liquors etc.
 
Coriander 

Coriander as a young plant is used for flavouring and garnishing curries and soups. The fruits (seeds) are widely used as condiments with or without roasting in the preparation of curry powders, sausages and seasonings. In medicines it is used as a carminative, refrigerant, diuretic, and aphrodisiac. In household medicines, it is used against seasonal fever, stomach disorders, and nausea. Coriander oil and oleoresins are primarily used in seasonings for sausages and other meat products.
 
Cinnamon 

Cinnamomum verum in India, it is grown in one or two locations in Kerala and is mostly cultivated in Sri Lanka, Malagasy Republic and Seychelles. The commercial products of cinnamon are quills, quillings, featherings, chips, cinnamon bark oil and cinnamon leaf oil. Cinnamon bark is a popular spice with a delicate fragrance and a warm agreeable taste. It is widely used in flavouring confectionary, liquors, pharmaceuticals and cosmetics. It is found to help diabetics in digestion of sugar. It has astringent; stimulant and carminative properties and can check nausea and vomiting. The cinnamon bark oil has anti-fungal properties and cinnamon leaf oil is widely used in perfumery and cosmetics.
 
Nutmeg 

The nutmeg tree is a large evergreen native to the Moluccas (the Spice Islands) and is now cultivated in the West Indies. It produces two spices - mace and nutmeg. Nutmeg is the seed kernel inside the fruit Nutmeg is usually associated with sweet, spicy dishes - pies, puddings, custards, cookies and spice cakes. Used in small dosages nutmeg can reduce flatulence, aid digestion, improve the appetite and treat diarrhea, vomiting and nausea.
 
Star Anise 

Star anise is the unusual fruit of a small oriental tree. It is, as the name suggests, star shaped, radiating between five and ten pointed boat-shaped sections, about eight on average. Star anise is used in the East as aniseed is in the West. Apart from its use in sweetmeats and confectionery. Star anise has carminative, stomachic, stimulant and diuretic properties. In the East it is used to combat colic and rheumatism.

Spice Oils & Extracts
 
Spice Oils  – They are the volatile components present in most spices and provide the characteristic aroma of the spices. Spice oil is normally extracted by steam distillation. The standard of quality expected in a spice oil will differ depending on its end uses. Therefore, these oils are custom-made to meet the exact requirement of the user. Spice oils are mostly used in food, cosmetics, perfumes and personal hygiene products like toothpastes, mouthwashes and aerosols, besides in a variety of pharmaceutical formulation.

Mint Oil  - India is now the largest producer of Mint oil and its derivatives. Because of its cooling effect and refreshing aroma, Mint oil has wide uses in tooth paste, mouth wash, chewing gum, candy, hair oil, perfume, cigarettes and cosmetic products. The many units producing this oil are using the latest know-how to meet customer requirements.
Spice Oleoresins  – They represent the complete flavour profile of the spice. It contains the volatile as well as non volatile constituents of spices. Oleoresins can be defined as the true essence of the spices and can replace whole/ground spices without impairing any flavour and aroma characteristic. Spice oleoresins guarantee superior quality of flavour and aroma. They are complete and balanced, consistent and standardised. They ensure storage stability in the final product and are free from contamination. Custom made blends are also offered to suit the specific requirement of the buyer.
